What is Speciality Coffee?

Specialty coffee can consistently exist through the dedication of the people who have made it their life's work to continually make quality their highest priority. This is not the work of only one person in the lifecycle of a coffee bean; specialty can only occur when all of those involved in the coffee value chain work in harmony and maintain a keen focus on standards and excellence from start to finish. With out these people this coffee will be lost among the commercial coffees. This is no easy accomplishment, and yet because of these dedicated professionals, there are numerous specialty coffees available right now, across the globe, and likely right around the corner from you. According to SCA (Specialty Coffee Association) definitions.

Speciality Coffee refers to the whole process from farmer to cup and only using single origin beans as well as the way this coffee is roasted and how the coffee is extracted. But Speciality Coffee should not be confused with marketing term words like premium coffee or gourmet coffee. As these words don't define standards of the flavour and taste of the coffee.

To achieve the highest quality green coffee beans, farmers have to look after the coffee plantations and harvest at the right times. Then the green beans are washed and dried before pulping the shells to revel the coffee beans. Its then sorted and sifted through filters to extract the best green coffee beans to achieve high standards so that it can be quality scored higher than 80 points on the quality scale. Only then can you achieve the excellent or outstanding quality in fragrance, aroma, flavour, aftertaste, balance, clean cup, sweetness, and overall great tasting coffee.
